Baked Arctic Char with Roasted Garlic Tasty Recipe.


Arctic Char has a highly priced delicate, mild flavor with a firm texture and fine flake. The flesh varies in color and may be red to pale pink, with the bright red commanding the highest price. A delightfully sweet flavor, delicious skin and a huge portion of life-saving Omega oils, also rich in calcium, phosphorus, potassium, sodium and vitamin B.
    Char is an excellent source of heart healthy Omega-3 fatty acids, it may contain higher levels than salmon. Per 3.5 oz (100 g) raw edible portion it contains 104 Calories, 3.6 g Total Fat, 58 mg Sodium, 16.7 mg Protein, 309 mg Potassium, 0.3 mg Iron, and 0.37 g Omega-3.

Baked Arctic Char Recipe - easy recipe how to bake Arctic Char fillets with garlic, grapeseed or canola oil, freshly squeezed lemon juice, and fresh rosemary. It came out perfectly, and the roasted garlic and rosemary really flavor a boring fish. This is a great and easy way to cook Char.

Ingredients:

  • 2 fresh Arctic Char fillets (about 1 pound each)
  • 2 medium-sized bulbs garlic
  • 1/4 cup grapeseed or canola oil
  • 2 tablespoons freshly squeezed lemon juice
  • Leaves from 3 large sprigs fresh rosemary
  • Salt and pepper, to taste

Baked Arctic Char with Roasted Garlic Recipe

How to cook Baked Arctic Char with Roasted Garlic:

  • Preheat oven to 350°F.
  • Slice off top of the garlic bulbs, wrap in foil and roast for 1 hour. Set aside and allow bulbs to cool.
  • Squeeze the roasted garlic from the bulbs into a food processor, add canola oil, lemon juice, rosemary and process until mixture is smooth.
  • Raise the oven temperature to 400°F.
  • Place the Arctic char fillets on well-oiled, foil-covered baking sheet. Salt and pepper the fillets liberally.
  • Spread puree over the Arctic char fillets, making sure all the flesh is well covered. Let fish marinate in refrigerator for 30 minutes.
  • Bake the Arctic Char fillets for 12 to 15 minutes, until the meat flakes easily and has a somewhat darker appearance on the inside.
  • Broil for another 2 minutes to brown the tops of the Arctic Char fillets.

How to fillet Arctic Char:

With their thin skin and tiny scales, char do not need scaling and are often cooked whole. To fillet larger fish, place the char lying on its side; insert the sharp, thin knife behind the gills, and cut in an arc down to just above the backbone. Continue cutting parallel to the backbone toward the tail. Bring the knife up at the tail and remove the fillet.
