Baked Tautog Easy Recipe.
Tautog or Blackfish are an excellent tasting fish with firm, pure white meat. Its flesh is white, dry, and of a delicate sweet flavor. It may grilled, broiled ot baked. And its firm flesh makes it especially suitable for fish chowder. The lean, firm flesh is excellent when it is skinned and filleted. Due to it's firmness, however, it is important not to overcook tautog as it will tend to be tough, chewy, and lacking in flavor.

Baked Tautog Recipe - Easy recipe how to bake blackfish with butter, olive oil, onions, lemons, eggs, parsley, and curry.
Ingredients:
- 1 whole fresh Tautog/Blackfish, cleaned (about 3 lbs)
- 2 tbsp butter
- 2 cups olive oil
- 4 onions
- 2 lemons
- 3 eggs, well beaten
- 1 bunch parsley, cut fine
- 1 tsp curry
- Salt and pepper to taste

Serves/Makes: 6-8

How to cook Baked Tautog:
- Place fish in salt water and let it soak for 30 minutes.
- Clean the fish well, wash well, then rinse and pat dry with paper towels.
- Cut tautog from head to tail down the backbone.
- Cut these again into halves, salt and leave for 1-2 hours.
- Put the butter and olive oil together in a deep flat pan.
- Fry the chopped onions, not very brown.
- Over this arrange the pieces of fish, then add the eggs, add juice of the lemons and the parsley.
- Sift the curry, season to taste and, after pouring on almost enough water to cover the ingredients.
- Place the pan in a moderately hot oven and leave there until well baked.
- Use more lemon, if desired, when serving.
