- 8 fresh Crappie fillets, cut into serving size pieces
- 1 1/2 cups of yellow corn meal
- 1 egg
- 1 cup of milk
- Olive oil for frying

- Clean fish and wash it well.
- Place fish in milk and let it soak for 40-60 minutes (takes out fishy flavor).
- Rinse and pat dry with paper towels.
- Beat eggs and milk together.
- Sprinkle fillet with salt and pepper.
- Dip fillet in the mixture.
- Roll the fish in corn meal.
- Drop the fillets into a deep fryer.
- Deep fry for 4 to 5 minutes, turn them as they golden brown and cook for another 3 minutes.
