Ingredients:
- 6 fresh European Sea Bass / Branzino fillets, (6-8 ounce each)
- 1 red bell pepper
- 1 cup kernels corn
- Extra-virgin olive oil
- 6 tomatillos, diced
- 1 cup toasted pumpkin seeds
- 1 poblano chili, roasted, peeled, seeded and chopped
- 1/2 teaspoon cumin
- 1 lime, squeeze to juice
- Salt and pepper to taste

How to cook Grilled European Sea Bass Southwestern Style:
- Place fillets in salt water and let it soak for 15-20 minutes. Wash fillets well; rinse and pat dry with paper towels.
- To make salsa combine corn, tomatillos, pumpkin seeds, chili, lime juice and cumin in a bowl. Mix it, cover and refrigerate for several hours.
- Preheat the grill to 400°F over medium coals.
- Remove stem and seeds from bell pepper.
- Cut bell pepper in half and brush with a little olive oil.
- Place on grill and cook until the skin starts to bubble and blacken.
- Remove from grill and cut into thin strips.
- Season fillets with a little salt and pepper and place on grill.
- Grill until fish flakes easily when tested with a fork and cooked through to the center.
- Serve with salsa and pepper strips.
