- 2 pounds fresh Striped Bass fillets (6-8 ounces each).
- 1 cup (250 mL) nonfat sour cream
- 1/4 cup (60 g) grated Parmesan cheese
- 1 tablespoon (15 mL) lemon juice
- 2 tablespoons (30 mL) green onions slices
- 1/8 teaspoon (0.5 mL) hot pepper sauce
- Paprika to taste
- Parsley sprigs
- Non-stick spray

How to cook Striped Bass Parmesan:
- Place fillets in salt water and let it soak for 30 minutes. Wash fillets well; rinse and pat dry with paper towels.
- Place fillets into a non-stick spray-treated baking dish.
- Combine sour cream, grated Parmesan cheese, lemon juice, green onion slices and hot pepper sauce.
- Spread mix over fillets and lightly sprinkle with paprika.
- Preheat oven to 350°F.
- Bake fillets for 10 minutes per inch of thickness or until fish is flaky and no longer translucent in the center.
- Serve, garnished with parsley sprigs.
Notes:
This Striped Bass Parmesan is a very affordable dish. It is delicious, simple, quick and very easy to cook. Could be prepared for less than half an hour.
